Cannabis-Infused Pumpkin Bread with Chocolate Drizzle

Best tips for baking moist and flavorful pumpkin bread

Baking pumpkin bread isn’t complicated, but following these tips will ensure it comes out perfectly moist and crumbly.

  • Be mindful of your spice ratios - How much spice you add to the batter can make or break the flavor of the pumpkin bread. Adding too much will make it strong and slightly bitter. Another tip is to always use fresh spices. Don’t downgrade your pumpkin bread with spices that have sat on your shelf for over a year. You may even want to grind the spices up yourself if you’re feeling extra fancy!
  • Don’t reach for the pumpkin pie filling in your cabinet - Pumpkin pie filling is already loaded with sugar and spices. Puréed pumpkin contains no additional ingredients, so you have total control over how much or how little spice you include in the recipe. Remember, you don’t want to overload your taste senses or your blood sugar levels. 
  • Keep all ingredients at room temperature - Mixing ingredients at room temperature makes it easier to blend everything together. It will also help the pumpkin bread rise more evenly if the batter’s texture is nice and smooth.
  • Avoid under or overmixing the batter - Since we’re not relying on yeast to make the bread rise, you’ll want to be careful mixing the dry and wet ingredients. The pumpkin bread will be too tough if the batter is overmixed. Undermixing it may cause uneven air bubbles and create pockets of uncooked batter.

Ingredients for Cannabis-Infused Pumpkin Bread

  • 1 can pumpkin puree 
  • ¾ cup salted butter
  • 2 cups brown sugar 
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder 
  • ½ teaspoon baking soda
  • 1 teaspoon ground cloves 
  • 1 teaspoon ground cinnamon 
  • ½ teaspoon nutmeg 
  • 2 large eggs 
  • 1 tablespoon of coconut oil 
  • 1 Nové Honey Peanut Butter bar

Cannabis-Infused Pumpkin Bread Directions

  1. Preheat oven to 325 degrees F and grease two 8 x 4-inch loaf pans. 
  2. In a medium bowl, combine the cinnamon, cloves, nutmeg, baking soda, and baking powder.
  3. Combine the butter and sugar into a large mixing bowl and mix well, then add in the eggs and pumpkin.
  4. Add the flour last by mixing in a quarter cup at a time.
  5. Carefully pour half of the mixture into each loaf pan.
  6. Bake for 60 minutes and test if it’s done using a toothpick! Put back in the oven for 5-10 minutes if the toothpick doesn't come out clean.  
  7. Allow the loaf to cool in the pan for 10 minutes.
  8. While the loaf is cooling, bring a small amount of water to boil. Once the water has reached a boil, turn the heat down to medium.
  9. Cut Nové chocolates into squares and put them in a wide-mouth mason jar. Place the mason jar into the water for 7-12 minutes or until it has melted smoothly.
  10. Once the chocolate has melted fully and the loaf has had a few minutes to cool, pour the chocolate onto the loaf and evenly distribute the chocolate.
  11. Let the loaf chill in the fridge for 30 minutes or until the chocolate has solidified. 
  12. Cut the slices as big as you want and enjoy! 

*Nové chocolate bars contain 10mg of THC per square (100mg for one chocolate bar). The number of slices the loaf is cut into will dictate the dosing strength of each individual piece. If you cut it into 10 slices, each one will be around 10mg THC.

Dead Veggies is a new food company based in Colorado creating kimchi-based condiments.  The founders, Matt and Daniel, started Dead Veggies to reimagine Korean food in a unique and contemporary way.  Having spent their entire lives eating and making kimchi with their families inspired them to create a product that authentically represented their experiences as second-generation Korean-Americans.

Matt and Daniel explain how “authentic” means a different standard for every person depending on their individual experiences.  For them, Dead Veggies lets them combine their cultural identities and produce a product “authentic” to their own experiences but prepared with traditional Korean methods.

What is Dalgona coffee?

Dalgona coffee is a whipped coffee drink made with instant coffee, sugar, milk, and water.  The coffee is layered with a frothy, whipped coffee cream on top and iced or hot milk on the bottom.  Because it’s such a simple drink to make, many people have been inspired to make their own variations, including ones made with matcha and pumpkin spice.

Where did Dalgona coffee originate?

Dalgona coffee has a very odd history.  And the truth is, the drinks themselves don’t even contain the main ingredient it was named after.

A Korean sponge-like sweet, Dalgona (달고나) is believed to have appeared in the city of Busan during the 1960s or 70s.  This food exists throughout many parts of the globe, but under different names.  Some of the alternate names for Dalgona include sponge cake (New York and Pennsylvania), cinder toffee (Britain), honeycomb toffee (South Africa), sea foam (California and Pacific Coast), and karumeyaki (Japan). 

The coffee drink itself is inspired by an Indian coffee beverage called phenti hui coffee, or beaten coffee.  The main difference is that phenti hui coffee pours milk on top of the whipped mix, whereas dalgona coffee does the reverse. 

Another odd fact about Dalgona coffee, as mentioned before, is that it’s not made with any dalgona.  The name was actually coined by South Korean actor Jung Il-woo during an appearance on a show called Stars' Top Recipe at Fun-Staurant in January 2020, after remarking how the taste of the whipped cream reminded him of dalgona.  However, the COVID pandemic was the largest player responsible for popularizing it. 

After social distancing orders began in South Korea, there was a significant rise in recipes and videos showing how to make dalgona coffee at home.  Pretty soon, DIY dalgona coffee recipes began appearing across multiple South Korean YouTube channels before becoming a viral sensation on Tiktok under the hashtag #dalgonacoffeechallenge.  Many people now refer to the drink as the official ‘quarantine coffee.’

Best tips for making your own Dalgona Coffee

Although this is probably the easiest coffee drink you’ll ever make, there are a few things to remember to ensure you get the right taste and consistency. 

  • Use instant coffee ONLY

While you’d think it wouldn’t make much of a difference, many people will attest that instant coffee works better than ground coffee.  The ground coffee will not dissolve well in hot water compared to the instant.  The consistency of the drink won’t be the same and will have less frothiness to it.  That means K-cups are also a no-go.  Some have found drip coffee can work as well, but it can still be tricky to get just right. 

  • Don’t leave out the sugar

The sugar is key to getting the kind of frothiness you want for the foam.  Those who made the dalgona coffee without it found the cream doesn’t get as light or fluffy and won’t hold its form for long.  However, you can substitute it with unsweetened or other non-white sugars like brown, raw, or coconut sugar. 

  • It goes great with either hot or cold milk

As if this coffee drink couldn’t get any better, it’s great whether it’s hot or cold!  Non-dairy alternatives, like oat or almond milk, also work just as well.  But note that on this particular French toast recipe, milk is not necessary -- we'll just be using the cannabis-infused dalgona coffee cream! 

  • Using an electric mixer is easier and faster than doing it by hand

Hand mixers and electric whisks are far better and faster at mixing the whipped coffee cream.  While you can do it by hand, it will take much longer and may start to hurt your arm and hand after a couple of minutes.  Milk frothers also take a considerable amount of time and need to be very powerful to create such a thick and frothy texture.

Recipe: French Toast with Cannabis-Infused Dalgona Coffee Cream

The sweet and bitter qualities of Dalgona coffee perfectly complement the tartness of Nové’s Raspberry Bramble bar.  With the addition of French toast, fresh raspberries, and a spicy raspberry coulis, this recipe is guaranteed to make anyone a breakfast hero in 30 minutes or less.  For a balanced breakfast, serve your French toast with the new, collaborative “Bloody Matty” cocktail mix from Dead Veggies and MattyEaats.

Your Shopping List To Create Dalgona French Toast

INGREDIENTS:

  • 4 T Instant Coffee
  • 4 T Granulated Sugar
  • 1 bar Nové Raspberry Bramble (50mg THC, 12.5mg per serving)
  • 4 T Hot Water
  • 3 ea. Eggs, Whole
  • 2 cups Milk, Whole
  • 1 tsp Cinnamon
  • 2 T Brown Sugar
  • 1 tsp Kosher Salt
  • 8 thick slices Korean Milk Bread (substitute with shokupan, challah, or brioche)
  • 2 cups Fresh raspberries
  • 1 tsp Cocoa Powder
  • Optional Whipped Cream

OPTIONAL:

Spicy Raspberry Coulis

  • 1 cups Fresh raspberries
  • 1 cups Granulated sugar
  • 1 cups Water
  • ½ ea. Jalapeno
  • 1 T Korean Chili Flake (gochugaru)
  • 5 oz Smuckers (or your favorite) raspberry jam
  • 1 oz. Elderflower liqueur (we used St. Germain)
  • 1 ea. Lemon juice/zest
  • 1/2 tsp. Kosher salt

Step One: Make The Cannabis-Infused Dalgona Coffee Cream

  1. Dissolve the instant coffee, sugar, and Nové Raspberry Bramble bar with hot water inside a mixing bowl.  To adjust the dosage, add more or less Raspberry Bramble (divide the total mg’s by 4 to calculate mg/serving)
  2. Using a whisk, hand mixer, or stand mixer, whip the mixture for about 5-8 minutes until stiff peaks form.  Scrape down the sides to ensure every bit gets whipped.  Keep cool in the fridge until ready to DEVOUR.

Step Two: Stir Together The Spicy Raspberry Coulis

  1. In a small saucepot, combine all ingredients except lemon juice/zest.  Bring to a boil, then immediately turn down the heat to low and simmer for 7 minutes. 
  2. Turn off the heat and add the juice/zest of one lemon. 
  3. Remove the seeds with a strainer or chinois and transfer to the fridge to cool down. 

Step Three: Fire Up The Skillet and Assemble Your Dalgona French Toast

  1. In a small bowl, combine the milk, eggs, brown sugar, and cinnamon.  Set aside briefly until ready to use.
  2. In a 10-inch or 12-inch skillet, melt butter over medium heat.
  3. Dip bread in egg mixture, soaking both sides.  Shake off the excess egg mixture from the bread and place the bread slices onto the hot skillet.  Season lightly with salt and pan-fry each slice until golden brown (about 2-3 minutes), then flip to cook the other side.
  4. Serve immediately with the cannabis-infused Dalgona coffee cream, spicy raspberry coulis, fresh raspberries, and a light dusting of cocoa powder - add whipped cream for an indulgent treat.

How To Pair Beer and Cannabis Chocolates

Pairing beer and cannabis together has generally been met with a quick ‘no’ from some people. Yet there are those who are finding ways to enjoy consuming both while doing it safely. 

We did a previous post on pairing wine and weed, and now, in honor of National Beer Day, we’re sharing how to pair some of Colorado’s best craft beers with our Nové luxury chocolates. Colorado is home to dozens of craft breweries and is known for high-tier beers within the industry. Pair this together with products from one of Colorado’s most reputable cannabis companies and you can’t go wrong.

Why do beer and cannabis chocolates go together?

You’ve often heard not to mix cannabis and beer together. However, when done so responsibly, you’ll find that both substances actually compliment each other rather nicely. In fact, cannabis and hops are cousins

Although there’s been some debate behind this claim, scientists confirmed in 2002 that hops and cannabis were closely related and belonged to the Cannabaceae family, a species of climbing plants that produce petalless flowers. It’s not surprising when you consider how often beer and cannabis are described using the same adjectives; earthy, sweet, citrusy, spicey, etc. Cannabis and hops also produce some of the same terpenes, including myrcene, beta-pinene, and humulene.

Tips for consuming beer and cannabis chocolate

No matter how often you drink or consume cannabis, our motto is always "start low, go slow." When you drink alcohol, the blood vessels widen, making it easier for the bloodstream to absorb the THC from the edible. It not only enhances the high you’ll feel, but the side effects as well. This has led some people to experience what’s known as ‘greening out’.’ Greening out is a term used to describe someone who has ingested too much cannabis and begins feeling sick, followed by symptoms of dizziness, nausea, and anxiety.

Every person has a different tolerance for both weed and alcohol. What’s important is that you know your personal limits and monitor how your body responds. These tips can help you avoid overdoing it while still creating a unique and harmonious experience:

  1. Every square of our Nové chocolate bars is accurately dosed with 10mg of THC. As with most edibles, the onset of effects can take anywhere from 30 minutes to 2 hours. You could split each square in half to start off or cut it into quarters. Our chocolate’s creamy, stable center is easy to cut through without making a mess.
  2. The safest way to consume cannabis and alcohol together is 2.5mg of THC with a 1-2oz pour of beer, about the size of a regular shot glass. Let the chocolate melt in your mouth a little before taking a sip. It’s better if both are around room temperature. 
  3. Keeping your beer and cannabis chocolate flavors within the same terpene family will enhance the tasting and avoid too many terpene clashes. For instance, drinking a sour beer while eating a minty edible won’t mix well with your taste palette. Sometimes a stout you thought would go perfectly with dark chocolate is actually too heavy or bitter. Not every beer or chocolate flavor will taste good together, so part of the process is about finding that balance.
  4. Chocolate, specifically dark chocolate, is very acidic. Beer can be slightly acidic as well, but you want to avoid creating issues with your stomach. Imperial stouts and barrel-aged brews have a high ABV, so it’s best to stick with beers under 8%.
  5. We highly suggest drinking your beers from lightest to darkest so you can enjoy the progression in body and flavor. You don’t want your palette overrun by strong, bold flavors right out the gate. 
  6. If you are on any kind of prescribed medication, please DO NOT mix cannabis or beer with each other or anything else before speaking with your doctor. You must always consider your health and wellness first.

A Tropical and Summery Cannabis Recipe: Grilled Pineapple with Chocolate

You’ll definitely want to have these caramelized grilled pineapples at your next cookout. How To Tell If Your Pineapple Is Ripe

You don’t want to use a pineapple that isn’t ripe and ready to eat. You also want to avoid using one that’s overripe since the taste and texture won’t be the same. These tips can help you know how to choose a ripe pineapple from the store.

  • The skin should be firm but slightly soft when you squeeze it.
  • Ripe pineapples will smell sweet toward the bottom near the base of the pineapple. A slightly sour, vinegary smell indicates it’s actually overripe.
  • The color will be light to medium yellow with a mild green hue. Pineapples change from green to yellow when ripe. Some green pineapples can also be ripe, but not if it’s completely dark green.
  • It should have vibrant green, healthy frond leaves. 
  • Weight matters. Pineapples that are on the heavier side will have more juices, which means it’s ready to eat!

Instructions for Cutting Your Pineapple

  1. Cut off about one inch from the top and bottom of the pineapple.
  2. Stand it upright and cut from top to bottom to remove the skin in strips. Go around the pineapple to trim off any remaining part of the peel and eyes.
  3. Cut the pineapple into four quarters lengthwise and remove the core from each quarter piece.
  4. Cut the quarters into smaller wedges.

How To Prep Your Pineapple for The Grill

  1. Toss the pineapple wedges into a bowl and coat them with the brown sugar. Put them on the skewers and sit for 10 minutes before grilling them. If you’re worried about the pineapple sticking, you can spray it with some canola oil.
  2. Grill over medium heat for about 7-10 minutes while turning them occasionally. You can tell the pineapple is done once it’s tender and golden brown with slight grill marks.

Preparing the Coconut Chocolate Drizzle

An easy way to melt the chocolate is by using the double boiler method.

  1. Choose the dosage you want and break apart the Island Coconut chocolate squares.
  2. Fill a pot with 1 to 2 inches of water. Put a heat-safe glass mixing bowl over the pot and add the chocolate. The bottom of the bowl should not be touching the water. 
  3. Turn up the stove to low heat. The steam from the water will start to slowly melt the chocolate. 
  4. Continuously stir the chocolate with a rubber spatula until it’s silky smooth. 
  5. Use a spoon to drizzle it over the caramelized pineapple and enjoy!

A great appetizer to a summer meal is a fresh salad. Add a little cannabis chocolate and you have a unique and delicious first course that’ll keep you in good spirits for the whole meal. We’ve elevated this raspberry chocolate salad recipe to a whole new level by including our Raspberry Bramble Chocolate to create a sweet and potent balsamic dressing.

Ingredients for Raspberry Chocolate Salad

Serving size: 4-6

Balsamic Dressing:

  • 3 tbsp. balsamic vinegar
  • 3 tbsp. canola oil
  • 1 tsp. honey
  • 1 tsp. unsweetened cocoa powder
  • Salt and pepper
  • 1 square of the Nové Raspberry Bramble Chocolate (10mg THC per piece)

Salad:

  • Baby romaine, arugula, and baby spinach
  • 1 pint of raspberries
  • ¼ cup of grated parmesan cheese
  • ½ cup of silver almonds
  • 1-2 squares of the Nové Raspberry Bramble Chocolate (10mg THC per piece)

How to Make the Chocolate Balsamic Dressing

  1. Dose out two squares of the Raspberry Bramble bar.
  2. Put all the ingredients into a blender to mix together. Set the dressing aside in a mason jar for at least 10 minutes so you get the most flavor.

Making the Rasberry Chocolate Salad

  1. Get a large bowl and throw in the greens, almonds, raspberries, and cheese. (Make sure the salad greens are washed first.)
  2. Top off the salad with chocolate garnishes using the Raspberry Bramble Chocolate bar. You can either chop the square(s) up into bits or use a potato peeler to make chocolate curls.

Your Go-To Cannabis Recipe for Backyard Barbecues

Ingredients for Chocolate Barbecue Sauce

Serving size: about 2 cups

  • 3 squares of the Nové Café Cappuccino Chocolate, chopped (10mg THC per piece)
  • ¼ tsp. cayenne
  • 2 tsp. chili powder
  • 2 tbsp. cider vinegar
  • 2 cloves of garlic, minced
  • ¼ cup brewed coffee
  • ⅓ cup packed brown sugar
  • 1 ½ cups of ketchup
  • 2 tsp. dry mustard
  • 1 tsp. ground black pepper
  • ½ tsp. ground coriander
  • 2 tsp. kosher salt
  • 2 tsp. salt 
  • 2 tbsp. unsalted butter
  • 2 tbsp. unsweetened cocoa powder
  • 1 tbsp. Worcestershire sauce

Note: When refrigerated in an air-sealed container, this sauce will last up to one week.

Cooking Instructions for Infused Chocolate Barbecue Sauce

  1. Melt the butter in a large saucepan over medium heat. Throw in the garlic and onion and cook them until they’re soft. Usually, this takes about 4-6 minutes.
  2. Add the remaining ingredients to the saucepan and reduce the heat to a simmer. Stir occasionally for 5-8 minutes or until the sauce has thickened.

The words ‘hot chocolate’ and ‘summer’ don’t normally go together, but this recipe with a twist says otherwise! Our take on frozen mint hot chocolate infused with our Nové Glacier Mint Chocolate makes for a fabulous sweet treat after barbequing in the sun all day. The best part is it takes less than 10 minutes to make. An easy, quick, and luxurious summer dessert to wind down with on a warm evening!

Ingredients for Frozen Mint Hot Chocolate

Serving size: 1

  • Chocolate syrup
  • 1 packet of hot chocolate mix
  • 1-2 cups of ice
  • ½-1 cups of milk (you can also use chocolate milk if you want it extra, extra chocolatey!)
  • 1-2 ice cream scoops

How to Make A Cannabis-Infused Frozen Mint Hot Chocolate

Remember, each person's tolerance and body chemistry is different, so it's important to know your personal limits and abide by them for the best experience.  Thankfully, you can be confident in our lab testing and know that a square of Nové cannabis chocolate is accurately dosed with 10mg of THC, bringing on effects in 30 minutes to 2 hours.  That said, dose for your desired effect, cutting the piece into halves or even quarters.  Though our chocolates are filled, the creamy centers are stable enough to slice through without making a mess.

Note that not all wines and chocolates taste good together, and not all pairings are intuitive.  If you take a swallow of a beautiful, dry red wine while you have a chunk of fine, dark chocolate in your mouth, the terpenes may clash, and the chocolate will taste bitter and sour -- and not in a good way.

Raspberry Bramble with Full-Bodied Reds

Strong reds like Zinfandels, Cabernet Sauvignons, and Merlots go well with dark chocolates, like our 60% cacao Raspberry Bramble bar.  These wines are full-bodied and can stand up to the bitterness of dark chocolate while still offering enough fruit flavors to complement the sweetness.

A couple of lovely mid-range Californian Merlots include the 2016 Pahlmeyer Merlot from the Napa Valley region; and the award-winning 2018 Merlot by Arietta Hudson Vineyards.  Note that either of these wines should pair well with our other dark chocolate flavor, Island Coconut.

Pair our tropical, dark chocolate confection with the 2018 Three Palms Vineyards Merlot by Duckhorn Vineyards, another Napa Valley award winner.  Having received the "wine of the year" award by Wine Spectator and ranked in the top 100 worldwide by Wine and Spirits, we trust this vineyard to provide supreme quality.

Alternatively, pair this flavor with their Cabernet Sauvignon sourced from the Rutherford wine-growing region.  Truly, any of their oak-aged Cabernets will beautifully pair with this Nové flavor, having fruit-forward elements and firm structure.

Glacier Mint with Rich Ports

Conventional wisdom is that your dessert wine should be sweeter than the dessert itself, which in this case, is our Glacier Mint cannabis-infused chocolate.  Pair with a fortified, sweet red wine, like those from Niepoort, an authentic, Portugal-based vineyard grown in the world's oldest region, the Douro Valley.

If you'd rather not import, check out your local shops; we highly recommend choosing a Tawny Port over all other varieties, as the raspberry, cinnamon, and fig notes will pair beautifully.

Honey Peanut Butter with White Ports

Honey, peanut butter, and milk chocolate are all strong, sweet flavors, and again, will complement a port dessert wine perfectly. Consider a white port, having flavors of apricot, baked apples, and roasted nuts.  The warmth of this type of vintage will match the earthiness of our peanut butter filling.

Other sweet wines to try include MadeiraMarsala, and Amontillado/Oloroso Sherry.  Remember, these are “sipping wines.”  Don’t go too heavy on this to avoid tomorrow morning's hangover!

Cafe Cappuccino with Bright Acidity

White chocolate is made of cocoa butter, sugar, and milk.  It melts in your mouth with sweet touches of cream and honey, a delightful balance with Nové’s cappuccino filling.  Look for bright white and rose wines that can blend with the sweetness of the candy.

A sparkling asti spumante (think Italian champagne) complements the white chocolate flavors, and who doesn't love a glass of bubbly?  You might also like this mid-level 2019 Riesling Spätlese Norheimer Kirschheck by Donnhoff , or this lovely 2005 French sauterne by Chateau Lafaurie-Peyraguey.  Alternatively, consider a beautiful Pinot Noir or Beaujolais; all wines low in tannins will be a great choice.

Sea Salt Caramel with Sweet Flavors

Like many of our sweeter Nové truffles, the Sea Salt Caramel flavor will pair best with a glass of strong, sweet wine.  Get the party started and pair this with a trendy, fizzy red wine like Otello Lambrusco, grown in the Emilia-Romagna region of Italy.  Though available in dry, semi-sweet, or sweet versions, we actually suggest going against the norm and pairing this bar with a dry variety.  Lambrusco is one dry red that many people enjoy with sweets because it's less likely to be overpowered.

Moscato d'Asti and Asti Spumante are often paired with caramel-centric dishes, and Tawny Port, which has a delightful, nutty finish is extremely good with caramel -- and chocolate, for that matter!  Ice wines are rare since they are made of grapes that froze on the vine, but they’re exceptionally sweet, made of quality grapes, and should go well with this or any other Nové flavor.
