Ingredients for Grilled Pineapple with Chocolate Drizzle

Serving size: 6

  • 1 cup of brown sugar
  • 1 pineapple peeled, cored, and cut into even pieces
  • Wooden or metal skewers

How To Tell If Your Pineapple Is Ripe

You don’t want to use a pineapple that isn’t ripe and ready to eat. You also want to avoid using one that’s overripe since the taste and texture won’t be the same. These tips can help you know how to choose a ripe pineapple from the store.

  • The skin should be firm but slightly soft when you squeeze it.
  • Ripe pineapples will smell sweet toward the bottom near the base of the pineapple. A slightly sour, vinegary smell indicates it’s actually overripe.
  • The color will be light to medium yellow with a mild green hue. Pineapples change from green to yellow when ripe. Some green pineapples can also be ripe, but not if it’s completely dark green.
  • It should have vibrant green, healthy frond leaves. 
  • Weight matters. Pineapples that are on the heavier side will have more juices, which means it’s ready to eat!

Instructions for Cutting Your Pineapple

  1. Cut off about one inch from the top and bottom of the pineapple.
  2. Stand it upright and cut from top to bottom to remove the skin in strips. Go around the pineapple to trim off any remaining part of the peel and eyes.
  3. Cut the pineapple into four quarters lengthwise and remove the core from each quarter piece.
  4. Cut the quarters into smaller wedges.

How To Prep Your Pineapple for The Grill

  1. Toss the pineapple wedges into a bowl and coat them with the brown sugar. Put them on the skewers and sit for 10 minutes before grilling them. If you’re worried about the pineapple sticking, you can spray it with some canola oil.
  2. Grill over medium heat for about 7-10 minutes while turning them occasionally. You can tell the pineapple is done once it’s tender and golden brown with slight grill marks.

Preparing the Coconut Chocolate Drizzle

An easy way to melt the chocolate is by using the double boiler method.

  1. Choose the dosage you want and break apart the Island Coconut chocolate squares.
  2. Fill a pot with 1 to 2 inches of water. Put a heat-safe glass mixing bowl over the pot and add the chocolate. The bottom of the bowl should not be touching the water. 
  3. Turn up the stove to low heat. The steam from the water will start to slowly melt the chocolate. 
  4. Continuously stir the chocolate with a rubber spatula until it’s silky smooth. 
  5. Use a spoon to drizzle it over the caramelized pineapple and enjoy!
