Baking pumpkin bread isn’t complicated, but following these tips will ensure it comes out perfectly moist and crumbly.
- Be mindful of your spice ratios - How much spice you add to the batter can make or break the flavor of the pumpkin bread. Adding too much will make it strong and slightly bitter. Another tip is to always use fresh spices. Don’t downgrade your pumpkin bread with spices that have sat on your shelf for over a year. You may even want to grind the spices up yourself if you’re feeling extra fancy!
- Don’t reach for the pumpkin pie filling in your cabinet - Pumpkin pie filling is already loaded with sugar and spices. Puréed pumpkin contains no additional ingredients, so you have total control over how much or how little spice you include in the recipe. Remember, you don’t want to overload your taste senses or your blood sugar levels.
- Keep all ingredients at room temperature - Mixing ingredients at room temperature makes it easier to blend everything together. It will also help the pumpkin bread rise more evenly if the batter’s texture is nice and smooth.
- Avoid under or overmixing the batter - Since we’re not relying on yeast to make the bread rise, you’ll want to be careful mixing the dry and wet ingredients. The pumpkin bread will be too tough if the batter is overmixed. Undermixing it may cause uneven air bubbles and create pockets of uncooked batter.
Ingredients for Cannabis-Infused Pumpkin Bread
- 1 can pumpkin puree
- ¾ cup salted butter
- 2 cups brown sugar
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon ground cloves
- 1 teaspoon ground cinnamon
- ½ teaspoon nutmeg
- 2 large eggs
- 1 tablespoon of coconut oil
- 1 Nové Honey Peanut Butter bar
Cannabis-Infused Pumpkin Bread Directions
- Preheat oven to 325 degrees F and grease two 8 x 4-inch loaf pans.
- In a medium bowl, combine the cinnamon, cloves, nutmeg, baking soda, and baking powder.
- Combine the butter and sugar into a large mixing bowl and mix well, then add in the eggs and pumpkin.
- Add the flour last by mixing in a quarter cup at a time.
- Carefully pour half of the mixture into each loaf pan.
- Bake for 60 minutes and test if it’s done using a toothpick! Put back in the oven for 5-10 minutes if the toothpick doesn't come out clean.
- Allow the loaf to cool in the pan for 10 minutes.
- While the loaf is cooling, bring a small amount of water to boil. Once the water has reached a boil, turn the heat down to medium.
- Cut Nové chocolates into squares and put them in a wide-mouth mason jar. Place the mason jar into the water for 7-12 minutes or until it has melted smoothly.
- Once the chocolate has melted fully and the loaf has had a few minutes to cool, pour the chocolate onto the loaf and evenly distribute the chocolate.
- Let the loaf chill in the fridge for 30 minutes or until the chocolate has solidified.
- Cut the slices as big as you want and enjoy!
*Nové chocolate bars contain 10mg of THC per square (100mg for one chocolate bar). The number of slices the loaf is cut into will dictate the dosing strength of each individual piece. If you cut it into 10 slices, each one will be around 10mg THC.

What is Dalgona coffee?
Dalgona coffee is a whipped coffee drink made with instant coffee, sugar, milk, and water. The coffee is layered with a frothy, whipped coffee cream on top and iced or hot milk on the bottom. Because it’s such a simple drink to make, many people have been inspired to make their own variations, including ones made with matcha and pumpkin spice.
Where did Dalgona coffee originate?
Dalgona coffee has a very odd history. And the truth is, the drinks themselves don’t even contain the main ingredient it was named after.
A Korean sponge-like sweet, Dalgona (달고나) is believed to have appeared in the city of Busan during the 1960s or 70s. This food exists throughout many parts of the globe, but under different names. Some of the alternate names for Dalgona include sponge cake (New York and Pennsylvania), cinder toffee (Britain), honeycomb toffee (South Africa), sea foam (California and Pacific Coast), and karumeyaki (Japan).
The coffee drink itself is inspired by an Indian coffee beverage called phenti hui coffee, or beaten coffee. The main difference is that phenti hui coffee pours milk on top of the whipped mix, whereas dalgona coffee does the reverse.
Another odd fact about Dalgona coffee, as mentioned before, is that it’s not made with any dalgona. The name was actually coined by South Korean actor Jung Il-woo during an appearance on a show called Stars' Top Recipe at Fun-Staurant in January 2020, after remarking how the taste of the whipped cream reminded him of dalgona. However, the COVID pandemic was the largest player responsible for popularizing it.
After social distancing orders began in South Korea, there was a significant rise in recipes and videos showing how to make dalgona coffee at home. Pretty soon, DIY dalgona coffee recipes began appearing across multiple South Korean YouTube channels before becoming a viral sensation on Tiktok under the hashtag #dalgonacoffeechallenge. Many people now refer to the drink as the official ‘quarantine coffee.’
Best tips for making your own Dalgona Coffee
Although this is probably the easiest coffee drink you’ll ever make, there are a few things to remember to ensure you get the right taste and consistency.
- Use instant coffee ONLY
While you’d think it wouldn’t make much of a difference, many people will attest that instant coffee works better than ground coffee. The ground coffee will not dissolve well in hot water compared to the instant. The consistency of the drink won’t be the same and will have less frothiness to it. That means K-cups are also a no-go. Some have found drip coffee can work as well, but it can still be tricky to get just right.
- Don’t leave out the sugar
The sugar is key to getting the kind of frothiness you want for the foam. Those who made the dalgona coffee without it found the cream doesn’t get as light or fluffy and won’t hold its form for long. However, you can substitute it with unsweetened or other non-white sugars like brown, raw, or coconut sugar.
- It goes great with either hot or cold milk
As if this coffee drink couldn’t get any better, it’s great whether it’s hot or cold! Non-dairy alternatives, like oat or almond milk, also work just as well. But note that on this particular French toast recipe, milk is not necessary -- we'll just be using the cannabis-infused dalgona coffee cream!
- Using an electric mixer is easier and faster than doing it by hand
Hand mixers and electric whisks are far better and faster at mixing the whipped coffee cream. While you can do it by hand, it will take much longer and may start to hurt your arm and hand after a couple of minutes. Milk frothers also take a considerable amount of time and need to be very powerful to create such a thick and frothy texture.
Recipe: French Toast with Cannabis-Infused Dalgona Coffee Cream
The sweet and bitter qualities of Dalgona coffee perfectly complement the tartness of Nové’s Raspberry Bramble bar. Your Shopping List To Create Dalgona French Toast
INGREDIENTS:
- 4 T Instant Coffee
- 4 T Granulated Sugar
- 1 bar Nové Raspberry Bramble (50mg THC, 12.5mg per serving)
- 4 T Hot Water
- 3 ea. Eggs, Whole
- 2 cups Milk, Whole
- 1 tsp Cinnamon
- 2 T Brown Sugar
- 1 tsp Kosher Salt
- 8 thick slices Korean Milk Bread (substitute with shokupan, challah, or brioche)
- 2 cups Fresh raspberries
- 1 tsp Cocoa Powder
- Optional Whipped Cream
OPTIONAL:
Spicy Raspberry Coulis
- 1 cups Fresh raspberries
- 1 cups Granulated sugar
- 1 cups Water
- ½ ea. Jalapeno
- 1 T Korean Chili Flake (gochugaru)
- 5 oz Smuckers (or your favorite) raspberry jam
- 1 oz. Elderflower liqueur (we used St. Germain)
- 1 ea. Lemon juice/zest
- 1/2 tsp. Kosher salt
Step One: Make The Cannabis-Infused Dalgona Coffee Cream
- Dissolve the instant coffee, sugar, and Nové Raspberry Bramble bar with hot water inside a mixing bowl. To adjust the dosage, add more or less Raspberry Bramble (divide the total mg’s by 4 to calculate mg/serving)
- Using a whisk, hand mixer, or stand mixer, whip the mixture for about 5-8 minutes until stiff peaks form. Scrape down the sides to ensure every bit gets whipped. Keep cool in the fridge until ready to DEVOUR.
Step Two: Stir Together The Spicy Raspberry Coulis
- In a small saucepot, combine all ingredients except lemon juice/zest. Bring to a boil, then immediately turn down the heat to low and simmer for 7 minutes.
- Turn off the heat and add the juice/zest of one lemon.
- Remove the seeds with a strainer or chinois and transfer to the fridge to cool down.
Step Three: Fire Up The Skillet and Assemble Your Dalgona French Toast
- In a small bowl, combine the milk, eggs, brown sugar, and cinnamon. Set aside briefly until ready to use.
- In a 10-inch or 12-inch skillet, melt butter over medium heat.
- Dip bread in egg mixture, soaking both sides. Shake off the excess egg mixture from the bread and place the bread slices onto the hot skillet. Season lightly with salt and pan-fry each slice until golden brown (about 2-3 minutes), then flip to cook the other side.
- Serve immediately with the cannabis-infused Dalgona coffee cream, spicy raspberry coulis, fresh raspberries, and a light dusting of cocoa powder - add whipped cream for an indulgent treat.

How To Pair Beer and Cannabis Chocolates
A Match Made in Heaven
Pairing beer and cannabis together has generally been met with a quick ‘no’ from some people. Yet there are those who are finding ways to enjoy consuming both while doing it safely.
We did a previous post on pairing wine and weed, and now, in honor of National Beer Day, we’re sharing how to pair some of Colorado’s best craft beers with our Nové luxury chocolates. Colorado is home to dozens of craft breweries and is known for high-tier beers within the industry. Pair this together with products from one of Colorado’s most reputable cannabis companies and you can’t go wrong.
Why do beer and cannabis chocolates go together?
You’ve often heard not to mix cannabis and beer together. However, when done so responsibly, you’ll find that both substances actually compliment each other rather nicely. In fact, cannabis and hops are cousins.
Although there’s been some debate behind this claim, scientists confirmed in 2002 that hops and cannabis were closely related and belonged to the Cannabaceae family, a species of climbing plants that produce petalless flowers. It’s not surprising when you consider how often beer and cannabis are described using the same adjectives; earthy, sweet, citrusy, spicey, etc. Cannabis and hops also produce some of the same terpenes, including myrcene, beta-pinene, and humulene.
Tips for consuming beer and cannabis chocolate
No matter how often you drink or consume cannabis, our motto is always "start low, go slow." When you drink alcohol, the blood vessels widen, making it easier for the bloodstream to absorb the THC from the edible. It not only enhances the high you’ll feel, but the side effects as well. This has led some people to experience what’s known as ‘greening out’.’ Greening out is a term used to describe someone who has ingested too much cannabis and begins feeling sick, followed by symptoms of dizziness, nausea, and anxiety.
Every person has a different tolerance for both weed and alcohol. What’s important is that you know your personal limits and monitor how your body responds. These tips can help you avoid overdoing it while still creating a unique and harmonious experience:
- Every square of our Nové chocolate bars is accurately dosed with 10mg of THC. As with most edibles, the onset of effects can take anywhere from 30 minutes to 2 hours. You could split each square in half to start off or cut it into quarters. Our chocolate’s creamy, stable center is easy to cut through without making a mess.
- The safest way to consume cannabis and alcohol together is 2.5mg of THC with a 1-2oz pour of beer, about the size of a regular shot glass. Let the chocolate melt in your mouth a little before taking a sip. It’s better if both are around room temperature.
- Keeping your beer and cannabis chocolate flavors within the same terpene family will enhance the tasting and avoid too many terpene clashes. For instance, drinking a sour beer while eating a minty edible won’t mix well with your taste palette. Sometimes a stout you thought would go perfectly with dark chocolate is actually too heavy or bitter. Not every beer or chocolate flavor will taste good together, so part of the process is about finding that balance.
- Chocolate, specifically dark chocolate, is very acidic. Beer can be slightly acidic as well, but you want to avoid creating issues with your stomach. Imperial stouts and barrel-aged brews have a high ABV, so it’s best to stick with beers under 8%.
- We highly suggest drinking your beers from lightest to darkest so you can enjoy the progression in body and flavor. You don’t want your palette overrun by strong, bold flavors right out the gate.

9 Tips for Consuming Cannabis Edibles
1. Start with a low dosage
You’ve may or may not have heard of the saying ‘start low, go slow,’ but it’s something all cannabis newcomers should remember. It’s never a good idea to try taking more than the recommended dose if you haven’t tried cannabis before. You can find plenty of stories from people who had a bad experience after consuming too much, too fast.
2. Be patient
One important distinction between smoking and eating cannabis is the time it takes for the effects to start kicking in. When you smoke, the onset may only take a few minutes. But with edibles, you likely won't experience effects for 30 minutes to an hour after consuming; and, you should wait at least two hours before consuming more. Those who aren’t aware of this will sometimes eat another edible thinking the first dose wasn’t enough. This is a trap many first-time cannabis users can fall into, but it can be avoided if you stay patient and monitor how you’re feeling.
3. Don’t mix with alcohol
Mixing alcohol with edibles doesn’t make for a good combo. One issue with this is you’d be unable to distinguish whether the effects you’re feeling are from the alcohol or the THC. Another is the alcohol may increase the THC concentration in your blood, which was found in a study from the American Association of Clinical Chemistry (AACC).
4. Read the packaging closely
Just like how you read the nutrition labels on other foods, you’ll want to carefully read cannabis edibles' packaging. Legal market products will always show the amount of milligrams of THC per package and per serving. In Colorado, the standard at recreational dispensaries is 10mg THC per dose. But at medical retailers, some edibles can go as high as 100mg THC per dose!
5. Know your tolerance level
Chances are if you’re not an avid cannabis user, than your tolerance is relatively low. The effects will always differ person to person, but sometimes even the recommended dose can be too much for someone just starting out. If you're new to consuming edibles and are nervous about how your body may react, eat just half a piece for a 5mg serving! In particular, one study from Science Daily discovered high-fat foods can speed up cannabidiol absorption. Lastly, it might help curb some of the munchies later on!
7. Be in a comfortable space (figuratively and mentally)
Your setting plays a bigger part in your cannabis experience than you realize. This goes for your mental headspace, too. - The skin should be firm but slightly soft when you squeeze it.
- Ripe pineapples will smell sweet toward the bottom near the base of the pineapple. A slightly sour, vinegary smell indicates it’s actually overripe.
- The color will be light to medium yellow with a mild green hue. Pineapples change from green to yellow when ripe. Some green pineapples can also be ripe, but not if it’s completely dark green.
- It should have vibrant green, healthy frond leaves.
- Weight matters. Pineapples that are on the heavier side will have more juices, which means it’s ready to eat!
