The Colorado Cannabis Industry, Then and Now

Just over 10 years ago, at the onset of Colorado medical cannabis legalization, Medically Correct was born with a mission to truly help people and help shape the industry.  Rick Scarpello, Bob Eschino, Derek Cumings, and Josh Fink launched the incredibles chocolate bar line, which has since grown into the highest volume edibles company in Colorado!

With the consumer trend shifting over the last few years to more premium products, our founders noticed that affordable luxury in the form of filled chocolate wasn’t available to Colorado’s cannabis consumers.  Enter Nové – created not only to fill this gap (no pun intended;), but to also express our deep love of culinary creativity. 

Q&A with Cannabis Chef Josh Fink

We had a chance to sneak into the Nové kitchen for a Q&A sesh with Co-Founder and Executive Chef, Josh Fink.  Here’s what he shared with us.

Mr. Fink, how old were you when you began your culinary journey and what inspired you? 

When I was around three years old, I spent a lot of time in the kitchen with my grandmother.  At that age, I thought French fries were magic because they were so foreign from everything I had at home.  So, when my grandma made French fries, my mind was blown…I realized you could make everything!  After that, I was determined to figure out how to make anything.  I was always like – What is that?  Ok, let’s figure it out.

What’s the coolest thing you’ve figured out in more recent years?

Chocolate’s always been a part of my life and was a mystery for a long time in terms of how to make it.  Back in 2019 one of our producers had a workshop in Maryland that I was able to attend and make chocolate from bean to bar…it was unbelievable!  You can’t just make it at home, you know?  When I was a kid, I tried to figure it out.  I took some cocoa powder and sugar, and I didn’t even know what cocoa butter was aside from the lotion, so I remember thinking – I’ll just use butter instead. Ha! I realized pretty quickly that’s not chocolate.  Nearly 40 years later, I figured out how.

When did cannabis enter the life of Josh Fink? 

Initially, it was the usual early teen exploration.  In my early 20s, I had a dance career.  There was a time when I was studying at a summer program and took an intense technique class with this teacher named Stanley.  My feet would always cramp up, and the only way to get through his class was with the Stanley Special – an Advil, a lot of water, and three hits off a bowl, ‘cause only then you were loose enough to take a class with him.  I learned later, I had been medicating with cannabis and didn’t realize it. I knew it was more effective than ibuprofen early and I could control the psychoactivity.

Did you realize the synergy of chocolate and cannabis with the creation of incredibles?  Or was there an ah-ha moment prior to that? 

We started with baked goods, brownies, carrot cake, and such, as well as a few confections, such as hard candies and caramel corn.  We met Derek after a few months in business.  I have always appreciated the ability of chocolate to blend with cannabis, it’s certainly one of the elements contributing to the popularity of brownies in cannabis culture.

Launching any new product comes with its challenges.  What challenges have you come up against in the Nové kitchen?

The main challenge is really the amount of time we can run the One Shot machine to fill the chocolate.  And then there’s training; we have to ensure our staff can all run the machine properly to keep it working. 

What’s coming down the pipeline you’re excited about, Josh?

We’ve got a long list of what’s to come but the next three products we’re working on are rapid onset vegan gummies, as well as Nové gummies that are more Paté de fruit than traditional gummy. We’ll also be making a medical version of Nové chocolate. 

What in your career are you most proud of? 

Helping to make cannabis understandable and accessible for anyone.

What piece of advice would you give someone aspiring to follow in your footsteps within the cannabis industry? 

Follow your passion. Find a good team; no one is an island. Perseverance pays off.
